Function and Origins

The fairness pitcher solves a practical problem: in a teapot, first pours are lighter while later pours are stronger. Without mixing, guests drinking first would experience different tea strength than those drinking later. By pouring all tea into the fairness pitcher first, then serving, every guest receives tea of uniform concentration — embodying "fairness." The pitcher sits between teapot and cups, positioned for easy pouring.

Selecting a Fairness Pitcher

Key selection criteria: capacity should match the teapot, typically 1.5-2 times the teapot volume to hold all tea; wide mouth for easy receiving from teapot; smooth spout that doesn't drip or dribble; stable flat base that won't tip easily. Common materials include glass (allowing visual appreciation of tea color and clarity) and porcelain (more traditional). Glass is currently mainstream because its transparency lets guests admire the tea's color transformation.

Using the Fairness Pitcher

To use: pour all tea from the teapot into the fairness pitcher in one smooth motion, avoiding splashes. After pouring, gently swirl the pitcher to mix the tea evenly. When serving, hold the pitcher close to cups and pour with a steady wrist motion, catching the final drop with your thumb. Serve guests in order of respect — guests first, then host.
