The gaiwan is one of China's most versatile brewing vessels, consisting of a lid, bowl, and saucer. It is suitable for all tea types.
Why Use a Gaiwan
Unlike Yixing teapots, a gaiwan does not absorb flavors, making it perfect for tasting different teas without cross-contamination. The lid controls pouring speed and holds back leaves.
Technique
Fill the bowl about 80% full. Use your thumb to hold the lid, with index and middle fingers supporting the base. Tilt the lid to create a small gap for the liquid to flow out.
