Four Basic Brewing Methods
Gongfu brewing is China's most representative method, perfect for oolong and Puer tea, emphasizing skill and practice. Cup brewing is simplest, ideal for green tea, white tea, and office settings. Cold brew uses low-temperature extraction for a smooth, non-bitter taste — perfect for summer. Gaiwan brewing is the most versatile, suitable for all tea types. Choose based on tea type, occasion, and personal preference.
Three Golden Rules of Brewing
No matter the method, three factors remain constant: temperature, time, and leaf quantity. Temperature: green tea 75-85掳C, oolong 95-100掳C, Puer 100掳C, black tea 95掳C, white tea 85-90掳C. Time: gongfu 10-30 seconds quick pour, cup brew 2-3 minutes. Leaf quantity: gongfu uses more leaves (~1/3 of teapot), cup brew uses less (3g/200ml). Master these three variables for a perfect cup every time.
