White Peony
White Peony (Bai Mudan) is the second most produced white tea category, made from one bud with one or two leaves. The leaf-and-bud combination creates a more full-bodied cup than Silver Needle, at a more accessible price point — making it the best value among premium white teas.
Appearance & Quality
Quality White Peony shows connected bud and leaves, with plump buds and silvery down. The liquor is pale amber, clear and bright, with a rich, sweet taste and subtle floral notes. The presence of leaves adds body and complexity compared to the pure bud Silver Needle.
Brewing
Use 85-90掳C water to preserve its delicate character. Glass or white porcelain works best to appreciate its color. Use 3-5g per cup, steep 30 seconds to 1 minute. White Peony is excellent for daily drinking and ages beautifully — aged versions develop date and medicinal notes.
